Sweet Potato and Chicken Hash

The last two months have been just a little hectic. And between vacations and family visits, there have been weeks where I have done a lot of eating out. So to compensate, I’ve tried to find some new healthy dinner options. So here’s another fast weeknight option.sweetpotatochickenhash5

Ingredients (serves 4)
4 chicken breasts, cut into small pieces
4 sweet potatoes, peeled and diced
1 onion, diced
A dash each of paprika, cayenne, garlic powder, thyme, and salt
Olive oil
Fried egg, optional

1. In a pan on the stove, add enough olive oil to cover the bottom of the pan. Heat the pan over medium high heat. Add the raw chicken and cook until it is cooked fully. Add the seasoning and mix it. Set the chicken aside.

2. In the same pan, add some more olive oil. Once hot, add the sweet potato and onion. Cook until the potatoes are tender.

3. Add the chicken again and mix.

4. Fry an egg for each person who wants one.
