Today’s recipe is a simple one. This is one of my new favorite salads. With the pomegranate seeds and mandarins it reminds me of summer even though we are in the dead of winter. Plus, it doesn’t require much prep so it is an easy week night dinner option.

Ingredients (serves 4)
1 bag of romaine lettuce, chopped
Goat cheese (you can use as little or as much as you like)
1 container of pomegranate seeds
4 mandarin oranges, peeled and broken into wedges
4 green onions, chopped
1/4 cup olive oil
1/4 white balsamic vinegar
1. Place the chopped lettuce in the bottom of the bowl and top with the cheese, pomegranate seeds, and orange wedges. Right before serving, mix the olive oil and vinegar, and pour on the salad.
2. Without the dressing, the salad ingredients will last for a day or two if you want to save half to put in tupperware for lunch.
