The next post in my series of healthy but hearty dinners is loaded sweet potatoes. These are very easy to make and work as a great leftover lunch the next day as well. You could also alter the toppings if you don’t like some of the ones I used, or if you just want to clean out your cupboard/fridge.

Spaghetti Squash with Bolognese Sauce
Continuing on with the theme from my last two Wednesday posts, I am again posting something healthy and hearty. I know I use this phrase a lot, but that is because I think a lot of healthy meals out there are great, but often leave you still hungry for more food at the end of the meal. And often, this undoes the healthiness of the original meal because you get hungry sooner and end up snacking. So for my Wednesday posts through the end of February, I am going to try to give you lots of yummy and filling meals that will also keep you on track with any health related new years resolutions you made. Today’s post is: spaghetti squash with bolognese sauce.
I came up with this recipe because Dave is a big fan of pasta, and loves to make bolognese sauce. But I tend to avoid eating too much pasta, so I decided this was the perfect compromise because he could make the sauce and serve it on pasta, and I could serve my portion on spaghetti squash, which is very easy to make!
Crockpot Lime Chicken
So today is my first day back at school after an amazing two week vacation. Going back to reality is always hard, but especially harder when you spent your vacation in Hawaii and California and returned to VERY cold winter weather. As a result, all I want to eat are warm hearty meals, like pasta and pizza. But since I spent my time off eating way too much amazing food, today’s post attempts to achieve my goal of warm and hearty, while also staying somewhat healthy. And this dish is very versatile because you can serve it in a tortilla, on a salad, on rice, or on its own with some veggies on the side.

This soup takes a bit to cook (probably 1.5 hours on the stove), but it involves very little involvement. So if you have time this weekend, cook up a big batch to get you through next week!

So it’s that time of year where we really have to accept that winter is upon us and we won’t see sun for quite some time. And how do we cope with this? We eat warm, hearty foods sitting in front of the fire. This is a really easy crock pot dish that is perfect to come home to after a long day at work or school and then a commute back home in the rain. I actually doubled the recipe and have an additional 4 servings sitting in the freezer to get me through finals in the coming weeks.

This is one of those dishes that we tried once for a weeknight dinner, and loved it so much, that it’s now turned into a staple in our house. It’s fast, easy, healthy, and filling. It also requires very few ingredients, so it’s a great option for anyone who wants to avoid searching for a lot of different items at the grocery store.
