My Favorite Meal of the Week – Stuffed Peppers

This week I decided to finally try one of those dishes you always see pictures of, and think wow that’s so pretty, it must be really complicated.

Turns out, it’s not. I made stuffed peppers. And as long as you don’t mind a little mess, they were easy, pretty fast, and totally delicious (even the next day).

As you can see below, I did 6 peppers (split into 12 halves). This was enough for about 4-6 servings, depending on how hungry you are. I’d looked at a bunch of different recipes and it pretty much comes down to three simple steps.
1. Bake the peppers (after cutting them in half and de-seeding them) at 350 for 15-20 mins.

2. Saute your meat and/or veggies until fully cooked on the stove (this generally involves starting with onions, then doing whatever meat you want to do, and then any veggies).

3. Stuff the peppers, sprinkle cheese on top, and then put them under the broiler for 1-2 minutes to melt the cheese. Then enjoy. The best part is you can pretty much fill them with whatever you want- chicken, ground turkey, beef, or just all veggies.

I think I’ll be making these a lot now!
