Continuing with healthy recipes, here’s a lentil and sweet potato stew that can easily be made in the crock pot. The most work you have to do for this is some chopping, and then remember to throw it all in the crock pot. If you have a long work day, you can also start this at night and stop it when you wake up.

Chocolate Whoopie Pies
So here is the deal. Chocolate cookies are amazing by themselves. And so is cream cheese frosting. So why not put the two together and end with a delicious whoopie pie sandwich? I made these around Thanksgiving time so I did pumpkin cream cheese frosting, but you could substitute that in for a plain cream cheese frosting, or you could also make mint frosting to go with the chocolate.
Carrot Parsnip Soup
The last few weeks have been a bit hectic, so it’s been hard to have time to make dinner. But this soup is one of the easier soups to make. It is also a one pot soup, meaning not a lot of clean up. Plus it’s healthy. So if you’re like me, and ate a lot of Valentine’s Day cookies, this can help undo all that eating.
Lemon Rosemary Buttermilk Cake with Lemon Cream Cheese Frosting
I love lemon. I also love rosemary. So when I was picking what dessert to make for Valentine’s Day, this cake was a no brainer. I know some people are averse to cake because it’s too dense, or too dry. But this cake has buttermilk and whipped egg whites mixed in, so it is so light and fluffy. It’s also a very universal cake. You could do it for birthdays, holidays, whatever.
Also here is a peek at what I did for Valentine’s Day for my friends this year. I made 5 different kinds of cookies and bagged them into festive bags I found at Target. We ended up having a snow day on Valentine’s Day, so I had to drive around delivering cookies since I wasn’t able to give them away at school and I didn’t want to eat them all myself!!
Curried Cauliflower Soup
So after last Wednesday’s post for quesadillas, I’m back to healthy Wednesday posts with today’s curried cauliflower soup. No other intro needed. This is healthy, hearty, and not your average soup. So whip up a batch this week or weekend!
Oatmeal Coconut Raspberry Bars
You may have noticed by now that I like bar recipes. I seem to post them a lot. Maybe it’s because they have fruit in them and I tell myself they’re not quite as unhealthy, who knows. But here’s another bar recipe. And I’m sure I always say this, but these are amazing. I made them over the holidays and even ended up eating some of the ones I’d packed up to share with others. I just couldn’t resist.
Brussels Sprout, Bacon, and Bean Quesadilla
You guys know my stance on quesadillas. I love them, and would pretty much eat them every night if I could (see my previous post on them). Today’s post is a slight break from my streak of healthy Wednesday posts, but I promise, it’s worth it for this delicious quesadilla. Plus, it’s on a whole wheat tortilla, so it’s healthy, right???
Rosemary Butter Cookies
In honor of Valentine’s Day, I wanted to post a cookie that would be perfect to make for loved ones and friends. Most of the cookie recipes I post are just oozing with sweetness (if you hadn’t figured it out yet, I love everything sweet). But these are much simpler, with just a hint of sweetness. They are a twist on the traditional shortbread cookies. I decorated them with red sprinkles to help give them a festive feel, but you could also just use clear decorative sugar if you’d like them to be simpler.
