Watermelon Tequila Popsicles

Guys, drop everything you’re doing and go buy yourself a popsicle mold before tomorrow so that you can enjoy these amazing popsicles on Memorial Day (I have a slightly fancier popsicle maker which I used here, but you can also just do the classic plastic ones, or buy paper cups and wood sticks). I’ll be enjoying these at the pool today.

Recipe adapted from here.

Ingredients (makes 6 popsicles)
1/4 cup water
1/4 cup sugar
1 cup watermelon juice (you get this from juicing about half of a watermelon)
3/4 cup lemonade
2 tablespoons tequila (can leave out if you want it to be alcohol free)

1. Prepare your watermelon juice. I just used my lemon juicer to juice the watermelon into a bowl, and removed any seeds that got through.

2. Then combine the water and sugar in a microwave safe bowl and microwave for 30 seconds. Mix it with the watermelon juice and tequila.

3. To get the line effect, fill the popsicle mold 1/2 way with the watermelon mixture. Then let it freeze (at least long enough that the lemonade won’t mix with the watermelon liquid). Then pour a bit of lemonade in, leaving about 1/4 space. After the lemonade freezes a bit, finish with the watermelon juice. Keep in the freezer until ready to eat. If you don’t care about the design, then you can just mix the lemonade with the watermelon mixture and pour it all in at once.
