Chickpea and Avocado Salad

This is an excellent side salad for two very important reasons. First, I mean it goes without saying that it is delicious, it has avocado in it so clearly I’m going to love it. Second, it takes all of 10 minutes to make.

1 can chickpeas, drained and rinsed
1 avocado, diced
2 tablespoon fresh lime juice
Zest of 1 lime
2 tablespoons olive oil
1/2 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste

1. Start by making the dressing. Mix the lime juice, lime zest, oil, chili powder, and cumin. Add salt and pepper to your liking. Add the chickpeas and avocado and mix well.


2. Nope, no number two. This is literally that easy. I recommend eating it completely on the day you make it because of the avocado.
