This past weekend, the weather finally got really cold. This means that it is now officially crock pot stew time. I don’t normally like to cook red meat at home, but this is a very easy way to do it. We bought the beef stew meat at Trader Joe’s and it came cut in the perfect small stew pieces, therefore, making this stew very easy to make. So next time the temperature dips down low, grab these ingredients and make this stew!
Recipe adapted from here.
Ingredients
2 pounds beef stew meat
1 cup chopped yellow onion
1 cup diced carrots
3/4 cup chopped celery
3 cups peeled and chopped russet potatoes
1 teaspoon ground black pepper
2 1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon cinnamon
1/2 teaspoon cumin
2 3/4 cup beef broth
3/4 cup apple cider
1/4 cup flour
1. Cut all of the vegetables. Place them in the crock pot. Cut the meat into small pieces and add to the pot. Sprinkle salt, pepper, thyme, cinnamon, and cumin on top. Cover with beef broth and apple cider. Mix everything. Make sure all of the potatoes are covered with liquid.
2. Cover the crock pot and cook for four hours on high or eight hours on low.
3. 10-15 minutes before it is done, remove 1-3 cups of liquid. Add the flour. Let the mixture finish cooking.
