Fig Spread with Whipped Goat Cheese on Toasted Bread

Who doesn’t love a fig newton? Ok maybe not everybody, but I do. My dad always ate them, so I grew up eating them all the time. This fig spread is sort of like the appetizer version of a fig newton. Plus, this is so easy to make and you can make extra to freeze and have on hand for a last minute wine and cheese party.

Cinnamon Crunch Skillet Bread

Any of you on the east coast know that we are struggling to get from winter to spring. Just as we get a hint of spring with some sun and warmth, we get covered in snow again. With all this cold weather, this bread has been the perfect thing. It is so warm and enveloping with it’s amazing scent and flavor that it makes up for just a little bit of the horrible dreary weather. But don’t get me wrong, I still REALLY need spring to come. I’m dreaming of avocados, fruit, outdoor BBQs, and everything else amazing that comes with spring and summer. So that forecast of snow on Tuesday better be wrong.

Apple Crumble Cake

So normally I am a huge proponent of the crumble because it’s a relatively healthy dessert when made in a certain way (see my previous post). This crumble cake is absolutely in a different category. You can not tell yourself this is healthy when you are eating it. That said, THIS IS AMAZING. It is so fantastic. It basically tastes like apple pie with a scoop of ice cream on top, but all in a piece of cake. So if you’re feeling a bit decadent, make this for your next BBQ or outdoor party!

Crock Pot Lentil and Sweet Potato Stew

Continuing with healthy recipes, here’s a lentil and sweet potato stew that can easily be made in the crock pot. The most work you have to do for this is some chopping, and then remember to throw it all in the crock pot. If you have a long work day, you can also start this at night and stop it when you wake up.

Chocolate Whoopie Pies

So here is the deal. Chocolate cookies are amazing by themselves. And so is cream cheese frosting. So why not put the two together and end with a delicious whoopie pie sandwich? I made these around Thanksgiving time so I did pumpkin cream cheese frosting, but you could substitute that in for a plain cream cheese frosting, or you could also make mint frosting to go with the chocolate.

Carrot Parsnip Soup

Lemon Rosemary Buttermilk Cake with Lemon Cream Cheese Frosting

I love lemon. I also love rosemary. So when I was picking what dessert to make for Valentine’s Day, this cake was a no brainer. I know some people are averse to cake because it’s too dense, or too dry. But this cake has buttermilk and whipped egg whites mixed in, so it is so light and fluffy. It’s also a very universal cake. You could do it for birthdays, holidays, whatever.

Also here is a peek at what I did for Valentine’s Day for my friends this year. I made 5 different kinds of cookies and bagged them into festive bags I found at Target. We ended up having a snow day on Valentine’s Day, so I had to drive around delivering cookies since I wasn’t able to give them away at school and I didn’t want to eat them all myself!!
