Mini 7-Layer Dips

Next up in my Wednesday party appetizer posts: 7-Layer Dip. I live for 7-Layer Dip. I love bringing it to parties, and end up eating most of it. But, after a few people dig in, it starts to look messy, and kind of gross. So how do you solve this problem? You put them in individually sized cups. Plus, they’re so festive looking.

Ingredients: (makes 12)
1 can of refried beans
1 pack of pre-made guacamole
1 container of sour cream
1 jar of salsa
1 cup of shredded cheddar cheese
1/2 cup of chopped green onions
1/2 cup of chopped black olives
12 individual cups
Note: if you like or dislike one of these ingredients, you can easily alter the amounts and do more or less of one. Or you can replace one altogether. You really can’t go wrong with this dip. Just make sure to put the beans on the bottom and the loose things on top!

1. Start with the beans. Use a spatula and cover the bottom of each container with beans. Then move on to the guacamole, and continue working down the list in order.

2. Keep in the fridge until ready to serve. You can make these the day ahead if need be, although they look better the day of.
