Although I love the Tollhouse chocolate chip cookie recipe that comes on the back of the bag (which I’ve blogged about before), I have been craving the big flat cookies that are super gooey in the middle so I decided to try these. And the results were delicious. While they didn’t get as flat and gooey as I wanted, it didn’t matter because the hint of molasses and browned butter gives them an extra special flavor that I really liked!

Fresh Fruit Tart
What is better for a summer gathering than a fruit tart? Nothing really. This one happens to be slightly more complicated (and involves some prep work ahead of time, so make sure to plan ahead), but it is so delicious that it is definitely worth the extra work. The homemade cream is so amazing! And the best part is, you can decorate it with any kind of fruit and can get creative with your designs.
Watermelon Tequila Popsicles
Guys, drop everything you’re doing and go buy yourself a popsicle mold before tomorrow so that you can enjoy these amazing popsicles on Memorial Day (I have a slightly fancier popsicle maker which I used here, but you can also just do the classic plastic ones, or buy paper cups and wood sticks). I’ll be enjoying these at the pool today.
Chocolate Mousse
There’s this restaurant in Carmel, California, that has the world’s most amazing chocolate mousse. It comes in this big pot with spoons to share and it is to die for. I didn’t know I liked chocolate mousse until I had it at this restaurant (La Bicyclette in case you’re ever in the area). So I’ve been wanting to try to make it myself. This mousse I made didn’t have the same consistency, but it was just as chocolate-y and delicious.
Apple Crumble Cake
So normally I am a huge proponent of the crumble because it’s a relatively healthy dessert when made in a certain way (see my previous post). This crumble cake is absolutely in a different category. You can not tell yourself this is healthy when you are eating it. That said, THIS IS AMAZING. It is so fantastic. It basically tastes like apple pie with a scoop of ice cream on top, but all in a piece of cake. So if you’re feeling a bit decadent, make this for your next BBQ or outdoor party!
Chocolate Whoopie Pies
So here is the deal. Chocolate cookies are amazing by themselves. And so is cream cheese frosting. So why not put the two together and end with a delicious whoopie pie sandwich? I made these around Thanksgiving time so I did pumpkin cream cheese frosting, but you could substitute that in for a plain cream cheese frosting, or you could also make mint frosting to go with the chocolate.
Lemon Rosemary Buttermilk Cake with Lemon Cream Cheese Frosting
I love lemon. I also love rosemary. So when I was picking what dessert to make for Valentine’s Day, this cake was a no brainer. I know some people are averse to cake because it’s too dense, or too dry. But this cake has buttermilk and whipped egg whites mixed in, so it is so light and fluffy. It’s also a very universal cake. You could do it for birthdays, holidays, whatever.
Also here is a peek at what I did for Valentine’s Day for my friends this year. I made 5 different kinds of cookies and bagged them into festive bags I found at Target. We ended up having a snow day on Valentine’s Day, so I had to drive around delivering cookies since I wasn’t able to give them away at school and I didn’t want to eat them all myself!!
Oatmeal Coconut Raspberry Bars
You may have noticed by now that I like bar recipes. I seem to post them a lot. Maybe it’s because they have fruit in them and I tell myself they’re not quite as unhealthy, who knows. But here’s another bar recipe. And I’m sure I always say this, but these are amazing. I made them over the holidays and even ended up eating some of the ones I’d packed up to share with others. I just couldn’t resist.
Rosemary Butter Cookies
In honor of Valentine’s Day, I wanted to post a cookie that would be perfect to make for loved ones and friends. Most of the cookie recipes I post are just oozing with sweetness (if you hadn’t figured it out yet, I love everything sweet). But these are much simpler, with just a hint of sweetness. They are a twist on the traditional shortbread cookies. I decorated them with red sprinkles to help give them a festive feel, but you could also just use clear decorative sugar if you’d like them to be simpler. Salted Caramel Bars
For my holiday party last month, in typical Amelia fashion, I made a very ambitious list of things I wanted to bake and cook (I think I made 18 items in the end). And then as I was going crazy trying to get ready by myself since our party was on a Tuesday and everyone else was at work, I decided I’d cut a couple of things I had been planning on baking. But then I just couldn’t do it. I wanted to eat every single thing on my list. This dessert was one of things I was going to cut because nothing I’d bought for it would go bad. But I am so glad I did not because I think these bars might have been the best dessert I made. These are seriously addictive, so if you just want a little snack for yourself, I recommend not making these. If you’re like me, you’ll eat every last one. But if you want to take a delicious dessert for a party, these are the perfect treat!
