Fresh Fruit Tart

What is better for a summer gathering than a fruit tart? Nothing really. This one happens to be slightly more complicated (and involves some prep work ahead of time, so make sure to plan ahead), but it is so delicious that it is definitely worth the extra work. The homemade cream is so amazing! And the best part is, you can decorate it with any kind of fruit and can get creative with your designs.

Tarragon and Mustard Chicken with Shallots and Tomatoes

Last year I finally got a dutch oven and was so excited to use it. And then I promptly forgot I had it and stopped using it. So in a recent effort to use all the kitchen gadgets I have (I used my popsicle maker last week), here is a delicious and pretty healthy dutch oven recipe that Dave found a few months ago.

Watermelon Tequila Popsicles

Guys, drop everything you’re doing and go buy yourself a popsicle mold before tomorrow so that you can enjoy these amazing popsicles on Memorial Day (I have a slightly fancier popsicle maker which I used here, but you can also just do the classic plastic ones, or buy paper cups and wood sticks). I’ll be enjoying these at the pool today.

Skillet Mac and Cheese

Mac and cheese is one of those dishes that you eat as a kid, but really never stop loving. You definitely learn to eat better (and fancier) mac and cheese, but no matter what, you still enjoy the dish. So, here is a really easy one that you make in a skillet.  It is perfect to serve at any outdoor functions you have this coming Memorial Day Weekend. Enjoy!

French Toast Muffins

And I’m back. Finals are done. First year of law school is done. Summer weather is here. So it’s time to get back to sharing lots of fun recipes for all of your summer outdoor get togethers. My next couple of posts will hopefully help you prepare for any big Memorial Day Weekend plans.

Today’s recipe is perfect, if any of your plans involve breakfast/brunch, and you want to prepare the meal ahead of time. These french toast muffins can be done the night before, and just cooked the morning of serving.

It’s almost summer…

Between the lack of of even remotely decent weather in DC and all of the time I’ve been spending inside studying, I am so ready for summer, good weather, and free time. But before we get to a time when I can start posting pictures from all my outdoor food related activities (see below for one of my favorite outdoor dinners last summer), the blog is going to take a month long break to help me get through the end of the semester. But I’ll be back May 14th after my last exam. Can’t wait! xo Amelia

Classic Gazpacho

It’s finally starting to feel slightly more like spring outside. Just slightly. But still, it already has me dreaming of all of the warm weather foods I treasure eating each spring and summer. I keep dreaming of rooftop BBQs. No I mean it, I actually wake up thinking about throwing parties outside in the sun with fun food. Yes, I know, I have a problem. Anyways, one of the food items I love making each summer is gazpacho. Here’s a simple recipe you can make yourself for dinner or serve as an appetizer at your next outdoor dinner party. I’ve also previously posted a spicy cucumber gazpacho recipe if you crave spice in your life.

Blackberry Scones Drizzled with Honey

By now you know I love waking up on Sunday mornings and baking something on a whim. It’s the reason I keep our apartment stocked with flour, sugar, butter, eggs, and milk. This was another one of my Sunday morning adventures. Scones are a great thing to make for a brunch for friends or to surprise your significant other or roommate with because they are really easy to make!! Very few ingredients involved and no complicated steps. So go to your nearby farmer’s market, buy some blackberries (or sub in another berry) and make some scones!

Mini 7-Layer Dips

Next up in my Wednesday party appetizer posts: 7-Layer Dip. I live for 7-Layer Dip. I love bringing it to parties, and end up eating most of it. But, after a few people dig in, it starts to look messy, and kind of gross. So how do you solve this problem? You put them in individually sized cups. Plus, they’re so festive looking.

Chocolate Mousse

There’s this restaurant in Carmel, California, that has the world’s most amazing chocolate mousse. It comes in this big pot with spoons to share and it is to die for. I didn’t know I liked chocolate mousse until I had it at this restaurant (La Bicyclette in case you’re ever in the area). So I’ve been wanting to try to make it myself. This mousse I made didn’t have the same consistency, but it was just as chocolate-y and delicious.
